Beetroot, dried cranberry, star anise and balsamic relish

Ingredients

    ml
    beetroot, grated
  • 1
    red onion, grated
  • 250
    ml
    dried cranberries
  • 500
    ml
    balsamic vinegar
  • 500
    ml
    sugar
  • 4
    tsp yellow mustard seeds
  • 2
    star anise
 

Method

Place all the ingredients in a large pan and bring to the boil. Cook for 30 minutes or until the beetroot is soft and the liquid has reduced slightly. Spoon into a large hot, sterilised jar and seal. Cool and store in the fridge for up to 2 months.
