Beetroot and mascarpone stars

  • 5
    medium beetroot, leaves and most of stalk removed, scrubbed
  • 125
    ml
    mascarpone cheese
 

Method

 
Boil beetroot in water to cover until tender, about 45 minutes. Allow to cool slightly, then pull off skins and slice thickly. Cut each slice into a star, using a small star-shaped cookie cutter. Drop a blob of mascarpone on each star.
