Beetroot and carrot salad

Ingredients

  • 120
    g
    grated or finely sliced beetroot (You can get ready packed julienned beetroot from Woolworths.)
  • 200
    g
    carrots (grated)
  • 200
    g
    mixed sprouts (fresh chick peas etc.)
  • 1/2
    cup
    sunflower seeds
  • 8
    spring onions (finely chopped)
  • DRESSING:
  • 1
    Tbs
    soya sauce
  • 1
    Tbs
    honey
  • 1
    Tbs
    sesame oil
  • 1
    Tbs
    apple cider vinegar
  • 3
    Tbs
    olive oil
  • 1
    cloves
    garlic (finely chopped)
 

Method

 
Place all the dressing ingredients into a jar, seal tightly and shake until emulsified.
Mix together the salad ingredients and pour over the dressing, toss well to coat in the dressing and transfer to a serving dish.
