Beetroot and apple mash with bangers

Ingredients

    g
    potatoes, peeled and diced
  • 1
    large green apple, peeled, cored and diced
  • 500
    g
    pork or beef sausages
  • 2
    medium beetroot, wrapped in cling film
  • 60
    g
    butter
  • milk
  • 30
    ml
    fresh chopped sage
 

Method

14 minutes
 
Cook the potatoes in boiling salted water for 8 minutes. Then add the apple, cooking both for a further 4 minutes. Prick the sausages and grill under a preheated grill, turning regularly until brown. Microwave the beetroot at full power for 6 to 8 minutes. Slip off the skins and grate. Drain the potatoes and mash with butter and salt and pepper to taste. Whip in enough milk to give a soft mash. Fold in beetroot and sage. Pile on plates and serve with sausages.
