Ingredients (12)

10.00 ml cornflour
125.00 ml stock — beef
400.00 g beef — fillet or rump
50.00 ml sunflower oil
6.00 spring onions — chopped into 2cm pieces
125.00 ml mangetout — green beans, trimmed, halved
125.00 ml broccoli — cut into florets
2.00 garlic — cloves, crushed
1.00 fresh ginger — julienned
30.00 ml soy sauce — dark
60.00 ml oyster sauce
5.00 ml sesame oil

Method:

Mix the cornflour with 30 ml of the beef stock or water until smooth. Spoon over the meat and stir to coat.
Heat 30 ml sunflower oil in a wok or large, heavy-based frying pan over high heat.
Add the meat and stir-fry for two to three minutes until browned. Remove the meat from the pan and set aside.
Add the remaining sunflower oil to the wok.
Stir-fry the spring onions, mangetout, broccoli, garlic and ginger for two minutes.
Return the meat to the pan and add the remaining ingredients.
Stir until the mixture thickens slightly, remove from the heat and transfer to serving bowls or platters.
