    cornflour

    beef stock or water
  • 400
    g
    beef fillet or rump, cut into thin strips, across the grain
  • 50

    sunflower oil
  • 6
    spring onions, cut into 2 cm pieces
  • 125
    ml
    mangetout or fine green beans, trimmed and halved
  • 125
    ml
    broccoli florets
  • 2
    cloves garlic, crushed
  • 1
    x 6 cm piece of fresh ginger, cut into julienne strips
  • 30
    ml
    dark soya sauce
  • 60
    ml
    oyster sauce
  • 5
    ml
    sesame oil
 

Method

Mix the cornflour with 30 ml of the beef stock or water until smooth. Spoon over the meat and stir to coat.
Heat 30 ml sunflower oil in a wok or large, heavy-based frying pan over high heat.
Add the meat and stir-fry for two to three minutes until browned. Remove the meat from the pan and set aside.
Add the remaining sunflower oil to the wok.
Stir-fry the spring onions, mangetout, broccoli, garlic and ginger for two minutes.
Return the meat to the pan and add the remaining ingredients.
Stir until the mixture thickens slightly, remove from the heat and transfer to serving bowls or platters.
