  • 500
    g
    topside or fillet, cubed
  • 4
    anchovy fillets
  • 10
    ml
    seed mustard
  • 1
    extra-large egg yolk
  • 10
    ml
    capers, chopped
  • salt and freshly ground pepper
  • 10
    ml
    Worcestershire sauce
  • 125
    ml
    finely chopped onion
  • GARNISH
  • 12
    small circles of bread, fried in garlic oil
  • 125
    ml
    whipped sour cream
  • 12
    smoked oysters
  • extra capers
 

Method

 
1. Using the chopping blade of a food processor, chop the meat. Add the remaining ingredients and mix well. Taste and adjust seasoning. Form the meat into 12 balls. 2. Pipe a dollop of cream onto each of the bread circles. Place a tartare ball on each and pipe a rosette of cream on top. Place a smoked oyster on the rosettes and round off with a few capers.
