Beef stroganoff

    cooking oil

    onions, sliced
  • 500

    fresh mushrooms, slivered

    salt

    freshly ground black pepper

    mustard powder
  • 15
    ml
    lemon juice
  • 250
    ml
    hot meat stock
  • 250
    ml
    low fat yoghurt
  • 15
    ml
    chopped parsley
  • brown rice to serve
 

Method

 
Brown meat (cut into 5 mm wide strips) in heated cooking oil. Add onions and mushrooms and sauté until the onions are translucent. Season with salt, pepper, mustard and lemon juice. Add heated meat stock, cover with lid and simmer for 20 to 30 minutes or until meat is tender. Remove from heat and stir in yoghurt just before serving. Garnish with chopped parsley, and serve with brown rice.
