Beef stir-fry

    deboned chuck steak, cut into strips

    large onions, sliced
  • 1
    green pepper, seeded and cut into strips

    carrots, scraped and cut into julienne strips

    spinach leaves (white stems removed), shredded
  • 300

    fresh button mushrooms, sliced
  • 1
    head cauliflower, broken into florets
  • 410

    pineapple chunks, drained (but reserve the syrup)
  • SWEET 'N SOUR SAUCE
  • 250
    ml
    pineapple syrup (drained from the pineapple chunks)

    ground ginger
  • 15
    ml
    soy sauce
  • 30
    ml
    grape vinegar
  • 20
    ml
    brown sugar
  • salt and freshly ground black pepper to taste

    cornflour
 

Method

 
Heat the oil in a wok or heavy-based saucepan. Brown the meat before adding the vegetables in the order indicated in the list of ingredients. Fry each kind of vegetable for a few minutes only as they should still be slightly crisp. Blend all the ingredients for the sauce and add to the meat mixture. Season to taste with salt and black pepper and simmer for about two minutes until the sauce comes to the boil and thickens. Stir every now and then. Serve immediately with rice. Serves 6.
