    topside of beef
  • salt and pepper

    stalk celery, sliced into rings
  • 2
    cloves garlic, crushed
  • 1
    large onion, sliced into rings

    sugar

    brown grape vinegar
  • 20
    ml
    prepared English mustard

    ml
    tomato sauce
  • 125
    ml
    meat stock
 

Method

 
Cut the topside into 1 cm thick slics. Season with salt and pepper and fry in a little oil and butter until brown on the outside. Arrange the meat slices in an ovenproof dish. Sauté the cloves, celery, garlic and onion in the oil in the pan until soft. Add the remaining ingredients and simmer until a thick sauce is formed. Pour the sauce over the meat slices, cover well and bake for about 2 hours or until the slices are tender. Alternatively, slowly cook the meat in a large saucepan on top of the stove until tender. Serve with potatoes or rice, vegetables and a mixed salad.
