Beef shin casserole

    olive oil

    beef shin, sliced
  • salt and freshly ground black pepper to taste

    onion, peeled and sliced into rings
  • 1
    lemon, sliced (with peel)
  • 250

    meat stock
  • 15
    ml
    tomato paste
  • few drops Tabasco sauce
  • 20

    Worcestershire sauce
  • 60
    ml
    chutney
  • chilli powder to taste
  • 5

    sugar
  • 2
    ml
    paprika,
  • 2
    ml
    ground cumin (jeera)
  • 1
    clove garlic, crushed
 

Method

 
Preheat the oven to 160 ºC. Heat the olive oil in a pan and rapidly brown the meat. Season with salt and freshly ground black pepper. Place the meat, onion and lemon in an oven dish. Bring the remaining ingredients to the boil and simmer for a few seconds. Pour over the meat, cover and bake for 1 1/2 -2 hours or until the meat is tender. (If the sauce becomes too thick, add a little red wine or water.) Serve with mashed potatoes or rice and vegetables. Serves 4-6.
