2.00 kg beef — deboned and rolled sirloin
salt and freshly ground black pepper — to taste
CRUST
15.00 ml oil
30.00 ml brown sugar
30.00 ml Dijon mustard
15.00 ml mustard — seeds
10.00 ml flour — cake
SAUCE
300.00 ml wine — red
1.00 stock cube — beef
300.00 ml water

Method:

Preheat the oven to 160 ºC (325 ºF). Season the meat roll all over with salt and pepper and place on the rack of an oven roasting pan. Oven-roast the meat for 15 to 20 minutes per 500 g plus an additional 15 minutes for rare, or 20 to 25 minutes per 500 g plus an additional 20 minutes for medium-done, or for 25 to 30 minutes per 500 g plus an additional 25 minutes for well-done. CRUST: Mix the oil, brown sugar, mustard, mustard seeds and cake flour. Spread the meat with the mixture about 20 minutes before the end of the roasting time, return to the oven and oven-roast until done. Leave the meat to rest in the warming drawer for 15 minutes before carving. SAUCE: Bring the wine, stock cube and water to the boil in a saucepan. Boil rapidly until reduced by half. Serve the sauce with the meat.
