Beef olives with Parma ham

    thin, flat slices of beef
  • salt and pepper
  • 30
    ml
    prepared mustard
  • 100
    g
    Parma ham slices
  • 170
    g
    artichoke hearts, diced
  • 25
    ml
    butter
  • 125
    ml
    meat stock
  • 125
    ml
    cream
 

Method

 
Spread the beef with 20 ml of the mustard and season with salt and pepper to taste. Place the Parma ham slices and artichoke hearts on top of the slices of beef and roll up tightly. Secure with toothpicks. Fry the rolls rapidly in melted butter until brown. Add the meat stock and cream, cover and simmer until the meat is tender. Remove the beef olives and season the sauce with the remaining mustard and extra salt and pepper. Serve with pasta.
