Ingredients (14)

2.00 kg thick rib- stew — cubed
15.00 ml oil
1.00 onion — large, chopped
125.00 ml tomato purée
125.00 ml stock — meat
5.00 ml paprika
50.00 g carrots — sliced
5.00 ml salt
freshly ground black pepper — to taste
600.00 g potatoes — mashed
200.00 ml milk — warm
5.00 ml Baking powder
3.00 ml salt
50.00 ml fresh parsley — chopped

Method:

1. Brown meat in heated cooking oil in a heavy-based saucepan. Add onion and sauté until translucent.
2. Heat tomato purée and meat stock together and add paprika, carrots, salt and pepper. Cover with lid, reduce heat and simmer for 90 minuets or until meat is tender.
3. Whisk potato until fluffy. Add milk, baking powder, salt, pepper and parsley. Spoon potato mixture into a piping bag. Pipe mixture on a greased baking sheet in a round shape with a well in the centre. Form one large or 6 to 8 individual small shapes. Bake at 200 ºC until golden brown.
4. Fill nests with cooked goulash and garnish with chopped parsley.
