Beef fillet with mealies and bacon

    whole beef fillet
  • FIRST ILLING

    cooked samp, minced

    fresh button mushrooms, finely chopped

    finely chopped parsley

    finely chopped fresh rosemary
  • freshly ground green and black pepper to taste
  • salt to taste
  • 4
    whole cooked carrots, thinly sliced
  • SECOND FILLING
  • 15

    chive mustard
  • 6
    large gherkins, chopped
  • freshly ground green and black pepper to taste
  • salt to taste
  • 500

    rindless streaky bacon
  • thin sosatie skewers
  • 45

    brandy (optional)
  • SAMP SAUCE
  • 100

    cooked minced samp
  • 1
    carrot, cooked and minced with samp
  • freshly ground green and black pepper to taste
  • salt to taste

    gravy thickener
 

Method

Blend all the ingredients for the marinade and marinate the fillet while preparing the fillings. Cut two slits in the fillet without cutting right through it. Mix all the ingredients for the first filling except the carrots and spoon into one of the slits. Place the sliced carrot alongside the filling in the same slit. Mix the ingredients for the second filling and spoon into the other slit. Wrap the fillet in rashers of bacon and secure the ends with sosatie skewers. Grill the fillet over moderate coals until medium-done. Baste regularly with the marinade - use a sprig of fresh rosemary. Remove the fillet from the heat and slice thinly against the grain. (If preferred, pour a little brandy over the fillet and ignite it.) Serve with the samp sauce. Mix all the ingredients for the sauce and bring to the boil. Thicken with the gravy powder which has been blended with a little water. Simmer till the sauce thickens and is done. Serves 6-8
