Beef fillet salad

    wholegrain mustard

    cider vinegar

    honey

  • salt and freshly ground black pepper to taste
  • Salad:
  • 20
    ml
    oil
  • 15
    ml
    butter
  • 400
    g
    beef fillet, cut into strips
  • salt and freshly ground black pepper
  • 1
    butternut, washed and thinly sliced
  • oil for deep-frying
  • 2
    potatoes, washed and thinly sliced
  • 100
    g
    mixed salad greens
  • 80
    g
    pistachio nuts
 

Method

Dressing:
Whisk together all the ingredients and set aside.
Salad:
Heat the oil and butter in a large pan over high heat and stir-fry the fillet strips until brown and done. Season with salt and pepper to taste and keep warm. Fry the butternut slices in the same pan until just done but still firm. Add the butternut slices to the meat and keep warm. Meanwhile heat the oil for deep-frying in a small saucepan and fry the potato slices until crisp. Mix the meat mixture, potato and butternut chips, salad greens and pistachio nuts in a large salad bowl and drizzle with the dressing. Serve immediately.
