Beef casserole

    oil
  • 1
    kg
    topside or sirloin steak, trimmed and cubed
  • 5
    rashers bacon, chopped
  • 2
    onions, chopped
  • 2
    cloves garlic, crushed
  • 60
    ml
    flour
  • 250
    ml
    beef stock
  • 375
    ml
    red wine
  • 1
    bay leaf
  • 2
    ml
    dried thyme
  • 125
    g
    mushrooms, sliced
 

Method

1 hour
 
Heat the oil in a large pot and brown the meat.
Remove meat from the pot, then sauté the bacon, onions and garlic.
Stir in flour and cook until browned.
Stir in stock, wine, bay leaf and thyme, and season to taste.
Return the meat to the pot and simmer for one hour, or until the meat is tender.
Stir in the mushrooms and cook for a further 15 minutes.
Serve with seasonal vegetables.
