Ingredients (11)

15.00 ml olive oil — extra virgin
400.00 g beef — fillet, cut into strips
4.00 lettuce — cos, to serve
0.50 cucumber — English, thinly sliced
4.00 beetroot — cooked, sliced
12.00 green beans — sliced and blanched
4.00 ml sea salt and freshly ground black pepper
Mustard dressing: wholegrain mustard
125.00 ml olive oil — extra virgin
2.00 cloves garlic — cloves, chopped
45.00 ml honey
60.00 ml vinegar — white wine

Method:

1. Heat oil and lightly brown beef fillet.
Transfer to a baking dish and roast for
20 minutes.

2. On individual serving plates, arrange
lettuce, cucumber, beetroot and green
beans, top with beef strips. Season and
drizzle with mustard dressing.

3. For the dressing: Mix all ingredients
together and whisk thoroughly.
