    extra-virgin olive oil

    beef fillet, cut into strips

    Cos lettuce leaves, to serve

    English cucumber, thinly sliced
  • 4
    beetroots, cooked and sliced
  • 12
    green beans, sliced and blanched
  • 4

    Salt and freshly ground black pepper
  • 30

    Mustard dressing: wholegrain mustard
  • 125
    ml
    extra-virgin olive oil
  • 2
    cloves
    garlic cloves, chopped
  • 45
    ml
    honey
  • 60
    ml
    white-wine vinegar
 

Method

1. Heat oil and lightly brown beef fillet. Transfer to a baking dish and roast for 20 minutes.

2. On individual serving plates, arrange lettuce, cucumber, beetroot and green beans, top with beef strips. Season and drizzle with mustard dressing.

3. For the dressing: Mix all ingredients together and whisk thoroughly.
