Beef and spinach curry

    beef thick rib, cubed
  • 2
    onions, sliced
  • 1
    clove garlic, crushed
  • 20

    fresh ginger root, grated
  • 10

    turmeric
  • 5
    ml
    peri-peri powder
  • 10
    ml
    coriander
  • 10
    ml
    mustard seeds, ground
  • 500
    g
    frozen spinach, defrosted and drained
  • 250
    ml
    natural yoghurt
 

Method

 
Preheat the oven to 160 ºC (325 ºF). Heat half the butter and oil in a pan and add the meat cubes, a few at a time. Brown and set aside. Heat the remaining butter and oil and sauté the onion and garlic until soft. Add the seasonings and fry for another minute. Return the meat to the pan. Heat the spinach and add to the meat in the pan, along with the yoghurt. Mix well and spoon into an ovenproof dish. Cover and bake for 1 1/2 to 2 hours or until the meat is tender.
