Beef and quince stew

    lean beef, thinly sliced and cubed

    diced onions
  • a little olive oil
  • 500
    ml
    diced potatoes (peeled)
  • 500
    ml
    diced carrots
  • 500
    ml
    quince pieces, peeled and cut off the core
  • 1
    Litres
    water
  • a dash Worcestershire sauce
  • 30
    ml
    lemon juice
  • 250
    ml
    diced green peppers
  • 500
    ml
    diced tomatoes
  • salt and pepper to taste
 

Method

 
1. Brown the meat and onions in olive oil then reduce heat and add the diced potato, carrots and quince and stir-fry for a few minutes before adding the water, sauce and lemon juice. 2. Allow to simmer for about 15 minutes, then add the remaining vegetables. Simmer for a further 15 to 20 minutes until tender. Taste for seasoning, adding more water if necessary. Serve with brown rice and green beans or peas.
