Beef and beer casserole

    boneless lean beef, cubed
  • salt
  • pepper

    cake flour
  • 30
    ml
    oil
  • 12
    pickling onions
  • 2
    cloves garlic, crushed
  • 450
    ml
    beer
  • 15
    ml
    red wine
  • 15
    ml
    wine vinegar
  • 1
    ml
    nutmeg
  • 2
    ml
    mixed dried herbs
  • 15
    ml
    French mustard
  • 15
    ml
    brown sugar
  • 5
    ml
    orange rind, grated
  • 15
    ml
    parsley, finely chopped
 

Method

 
Season the beef cubes with salt and pepper to taste and roll in the cake flour. Brown in a big pot in hot oil and set aside.
Sauté the onions until pale brown. Set aside.
Add the remaining cake flour to the fat in the pot and stir well.
Slowly add the beer, red wine and wine vinegar, stirring continuously. Bring to the boil.
Return the meat and onions to the pot and add the remaining ingredients, except the parsley. Cover and simmer until the meat is tender and a thick gravy has formed. Season with salt and pepper if necessary and sprinkle with chopped parsley just before serving.
