Ingredients (16)

700.00 g beef — cubed
salt
freshly ground black pepper
30.00 ml flour — cake
30.00 ml oil
12.00 pickling onions
2.00 garlic — cloves, crushed
450.00 ml beer
15.00 ml wine — red
15.00 ml vinegar — wine
1.00 ml nutmeg — ground
2.00 ml dried mixed herbs
15.00 ml french mustard
15.00 ml brown sugar
5.00 ml orange — zest only
15.00 ml fresh parsley — finely chopped

Method:

Season the beef cubes with salt and pepper to taste and roll in the cake flour. Brown in a big pot in hot oil and set aside.
Sauté the onions until pale brown. Set aside.
Add the remaining cake flour to the fat in the pot and stir well.
Slowly add the beer, red wine and wine vinegar, stirring continuously. Bring to the boil.
Return the meat and onions to the pot and add the remaining ingredients, except the parsley.
Cover and simmer until the meat is tender and a thick gravy has formed.
Season with salt and pepper if necessary and sprinkle with chopped parsley just before serving.
