Ingredients (14)

30.00 g cornflour
25.00 ml oil
2.00 garlic — cloves, crushed
200.00 g pickling onions — peeled
3.00 leeks — trimmed, washed and sliced
10.00 ml dried oregano
15.00 ml dried rosemary
150.00 g bacon — rindless, chopped
50.00 ml tomato purée
10.00 ml brown sugar
200.00 ml wine — dry red
285.00 g mushrooms — creamed
125.00 ml sour cream
500.00 g steak — cubed, stewing

Method:

Dust meat cubes with cornflour. Heat oil in a saucepan and brown meat lightly. Add garlic, onions, leeks, herbs and bacon and sauté for a few minutes. Add tomato purée, sugar and wine and simmer gently, uncovered, until sauce has reduced by half.
Place mixture in a greased casserole dish, pour creamed mushrooms over, cover and bake in a preheated oven at 160 ºC for 40-50 minutes or until meat is tender. Remove from oven, stir in cream and serve.
Serves 4.
