Beef sausages with panzanella salad

This easy recipe takes the stress out of cooking – ready to eat in half in hour.

  • 400
    beef sausages
  • 1/2
    cucumber, cut into quartered pieces
  • 1/2
    red onion, cut into thin wedges
  • 3
    ripe roma tomatoes, cut into wedges
  • handful fresh basil, torn
  • 3-4
    thick slices stale country loaf
  • 45
    olive oil
  • 15
    red wine vinegar
  • 10
    finely chopped capers (optional)
Servings: Change Serving


For the salad, mix the cucumber, onion, tomato and basil together in a large bowl. Mix the ingredients for the dressing together well and pour over the salad. Set aside for the flavours to mix.

Break the bread into bite-sized pieces. Pan fry the pieces of bread with a little olive oil until golden and crispy. Set aside to use later as

croutons, or add to the salad now to soak up some of the flavours.

Grill or fry the sausages according to the instructions on the packaging. Serve with the salad.
