    butter

    brown sugar

    canned butter beans, drained and coarsely chopped
  • 1
    egg
  • 5
    ml
    vanilla essence
  • 150
    g
    cake flour
  • 2
    ml
    bicarbonate of soda
  • 2
    ml
    salt
  • cinnamon sugar
 

Method

 
Cream butter and sugar together until mixture is light and fluffy. Blend in butter beans. Mix egg and vanilla together and lightly beat into creamed ingredients. Sift flour with bicarbonate of soda and salt and fold into mixture. Roll into large balls, place on baking sheets and flatten with a floured fork. Bake at 180 ºC for 10-15 minutes, or until lightly golden. Dust with cinnamon sugar. Makes 16-18.
