Beans and sweet corn

    butter
  • 1
    small onion, chopped
  • 150
    g
    green beans, trimmed and cut into 1cm pieces
  • 300
    ml
    frozen sweet corn
  • 410
    g
    butter beans
  • 30
    ml
    freshly chopped parsley
  • 50
    ml
    sour cream
 

Method

15 mins
 
1. Heat the butter in a saucepan and fry the onion until soft. Add the green beans and fry for two minutes.

2. Stir in the corn and butter beans (with their liquid). Bring to the boil, then reduce the heat and simmer for 10 minutes. Add a little water if it gets too dry.

3. Stir in the parsley and sour cream and season to taste with salt and freshly ground black pepper.
