    oil
  • 1
    medium-sized onion, coarsely chopped
  • large green pepper, cut into strips
  • 2
    green chillies, seeded and chopped
  • 2

    turmeric
  • 1
    ml
    chilli powder (optional)
  • 1
    tomato, skinned and chopped
  • 425
    g
    baked beans in tomato sauce
  • salt and freshly ground black pepper
  • 250
    g
    macaroni, cooked and drained
  • 65
    ml
    grated Cheddar cheese
 

Method

 
Heat the oil and sauté the onion, green pepper and chillies until soft. Add the turmeric and chilli powder if using, and stir-fry for another minute. Add the tomato and simmer for 2 minutes. Stir in the beans, mixing well. Simmer slowly until heated through before stirring in the macaroni. Spoon into hot serving plates and sprinkle with cheese. Serves 6.
