Bean soup

    oil
  • 1
    onion, halved
  • 125

    bacon, chopped
  • 3
    potatoes, peeled and diced
  • 250

    3 beef stock
  • 410
    g
    2 cans sugar beans, drained (410 g each)
  • 2
    ml
    masala
  • 250
    ml
    cream or milk
  • 5
    ml
    salt
  • 5
    ml
    freshly ground black pepper
  • 10
    ml
    lemon juice
  • 15
    ml
    chopped parsley to garnish
 

Method

Heat the oil and sauté the onion and bacon until lightly browned.

Add the potatoes, stock, beans and masala and simmer until the potatoes are cooked and soft.

Mash the vegetables with a potato masher.

Stir in the cream or milk, season with salt and pepper and heat through without bringing back to the boil.

Stir in the lemon juice and parsley just before serving.
