Bean balls

Ingredients

  • 300
    ml
    cooked dried beans, mashed
  • 300
    ml
    fresh brown breadcrumbs
  • 3
    rashers bacon
  • 1
    small onion, finely chopped
  • 3
    ml
    mustard powder
  • 10
    ml
    dried basil
  • 15
    ml
    parsley, chopped
  • salt and pepper to taste
  • egg, beaten
  • breadcrumbs for rolling in
  • oil for frying
 

Method

± 20 min
 
Blend the beans and brown breadcrumbs. Fry the bacon until done and chop finely. Sauté the onion in the fat in the pan until soft. Add to the dry bean mixture along with the chopped bacon. Add all the seasonings and roll the mixture into balls. Roll in the beaten egg and then in the breadcrumbs. Fry the balls in heated oil until brown on the outside. Serve with tomatoes and mashed potatoes. Makes about 15-20 balls.
