Ingredients (14)

500.00 g sausages — pork
oil — for frying
1.00 cauliflower — florets
410.00 g green beans — tinned, drained
490.00 g butter beans — tinned and drained
410.00 g baked beans in tomato sauce
SALAD DRESSING
150.00 ml sunflower oil — or olive oil
20.00 ml french mustard
20.00 ml vinegar — brown grape
60.00 ml lemon juice
5.00 ml sugar
250.00 ml yoghurt — plain
salt and freshly ground black pepper — to taste
fresh chives — chopped

Method:

Cook the pork sausages in boiling water till done. Drain well and cool slightly. Fry in oil till brown on the outside. Cool before slicing and setting aside.
Boil the cauliflower florets in a little salted water till just soft but still crisp. Drain well and rinse under cold running water.
Combine all the salad ingredients.
Blend all the ingredients for the salad dressing, except the plain yoghurt. Add the yoghurt, mixing well.
Pour a little of the salad dressing over the salad and serve the rest in a separate bowl or jug.
Sprinkle the salad with chopped chives just before serving.
Serves 6.
