Bean and sausage salad

Ingredients

    pork sausages
  • oil for frying
  • 1
    small cauliflower, broken info florets
  • 410

    green beans, drained
  • 490

    butter beans, drained
  • 410
    g
    baked beans or butter beans in tomato sauce
  • SALAD DRESSING
  • 150
    ml
    sunflower or olive oil
  • 20
    ml
    prepared French mustard
  • 20
    ml
    brown grape vinegar
  • 60
    ml
    lemon juice
  • 5
    ml
    sugar
  • 250
    ml
    plain yoghurt
  • salt and black pepper to taste
  • chopped chives
 

Method

20-30 min
 
Cook the pork sausages in boiling water till done. Drain well and cool slightly. Fry in oil till brown on the outside. Cool before slicing and setting aside. Boil the cauliflower florets in a little salted water till just soft but still crisp. Drain well and rinse under cold running water. Combine all the salad ingredients. Blend all the ingredients for the salad dressing, except the plain yoghurt. Add the yoghurt, mixing well. Pour a little of the salad dressing over the salad and serve the rest in a separate bowl or jug. Sprinkle the salad with chopped chives just before serving. Serves 6.
