Bean and samp salad

    cooked samp
  • 500
    ml
    cooked speckled sugar beans
  • 10
    ml
    strong curry powder
  • 75
    ml
    sugar
  • 25
    ml
    smooth apricot jam
  • 90
    ml
    brown vinegar
  • 250
    ml
    water
  • 5
    ml
    salt
  • 1
    large green cooking apple, peeled and cored
 

Method

 
Mix the samp and beans. Mix the curry powder, sugar, apricot jam and vinegar to form a smooth paste and add the water and salt. Grate the apple coarsely and add to the samp and bean mixture with the curry mixture. Bring to the boil and reduce the temperature. Cover and simmer slowly for 15 to 20 minutes. Serve hot as a side dish or on its own with a a salad and a fried egg or grilled sausage.
