Batter recipe for fritters

  • 250
    cake flour
  • 45
    vegetable oil
  • 250
    cold water
  • oil for deep frying
  • salt and sugar
  • fresh elder flowers, washed and dried


1. Put flour into a mixing bowl and add the oil gradually, stirring to blend. Slowly add the water, stirring constantly until the mixture is the consistency of thin cream. Add a pinch of salt and sugar. 2. Dip flowers into batter, shake off excess and deep fry until golden. Drain on kitchen paper. Serve with a good dredging of icing sugar.
