Basil pesto

    bunches basil leaves, washed
  • 125
    ml
    extra virgin olive oil
  • 30

    pine nuts
  • 2
    cloves of garlic, peeled
  • 5

    salt
  • 60
    g
    freshly grated Parmesan or rigatello cheese
  • 45
    g
    butter, softened
  • 500
    g
    hot cooked pasta
 

Method

 
Process the basil leaves, olive oil, pine nuts, garlic and salt in a blender until fine and creamy. Pour the mixture into a large bowl and stir in the grated cheese and butter. Toss hot cooked pasta in the sauce.
