Basil and hazelnut vinaigrette

    ml
    wholegrain French mustard
  • 100
    ml
    red wine vinegar
  • salt
  • freshly ground black pepper
  • 75
    ml
    finely chopped basil leaves
  • 250
    ml
    olive oil
  • 125
    ml
    roasted hazelnuts
 

Method

 
Combine mustard, vinegar, seasoning and basil in a food processor. Process for 1 minute, switch off and scrape sides of bowl, repeat. With the motor running, slowly add the oil, then nuts. Switch off and check the nuts they should be fairly fine but discernible in the dressing. Do not overprocess.
