Basic vinaigrette

Ingredients

  • 30
    ml
    wine vinegar or lemon juice or a mixture of both
  • pinch dry mustard
  • 90
    ml
    olive oil or sunflower oil
  • good pinch salt and freshly ground black pepper
  • 30
    ml
    chopped herbs, parsley, chives, tarragon, basil or pinch dried herbs
 

Method

 
Stir together ingredients vigorously. They will separate on standing but recombine easily when whisked. The vinaigrette can be made in a screw-top jar and shaken vigorously.
