Basic vinaigrette

Ingredients

  • 30
    ml
    balsamic, grape or red wine vinegar or juice
  • rind of 1 to 2 lemons
  • 1
    garlic clove (optional)
  • 75
    ml
    oil (mixture of canola and olive oils)
  • salt (or 5 ml soy sauce) and freshly ground black pepper
  • pinch of sugar
 

Method

Juice the lemons and grate the rind (if using). Bruise the garlic (if using) with the flat side of a knife blade. Pour the oil into a measuring jug, add the lemon juice or vinegar, whole garlic (if using) and remaining ingredients and blend with a wire whisk. Leave to stand for at least 30 minutes so the garlic flavour can infuse the dressing.
