Basic pancake batter

    ml
    cake flour
  • 2
    ml
    salt
  • 10
    ml
    baking powder
  • 1
    Litres
    water
  • 30
    ml
    castor sugar
  • 1
    egg
  • 15
    ml
    vinegar
  • 45
    ml
    oil
  • oil for frying
 

Method

 
Sift together the flour, salt and baking powder.
Blend the water, sugar, egg, vinegar and oil and gradually add to the dry ingredients while beating.
Continue beating until the mixture is smooth.
Leave the batter to rest for 30 minutes (this will ensure the pancakes are feather light).
Brush a hot pan with a little oil and spoon enough batter into the pan to coat the bottom when you tilt it.
Heat until the under side is light brown, turn and brown the other side.
