Ingredients (10)

75.00 ml butter — or margerine
170.00 g castor sugar
150.00 ml milk
2.00 eggs — large, seperated
2.00 ml vanilla — essence
200.00 g flour — cake
salt — pinch
5.00 ml Baking powder
50.00 g bran — cereal
50.00 g walnuts — chopped

Method:

Preheat the oven to 160 ºC (325 ºF). Grease a 20 cm round cake tin with margarine or butter. Cream the butter until light. Add the castor sugar while beating continuously. Gradually add the milk while beating continuously – the mixture may curdle. Add the egg yolks and vanilla, and beat well. Beat the egg whites until soft peaks are formed and fold into the butter mixture using a metal spoon. Sift the cake flour, salt and baking powder together and fold into the butter mixture, alternating with the bran cereal and walnuts. The batter will be fairly slack. Turn the batter into the prepared tin, making a slight hollow in the centre. Bake for about 1 1/2 hours or until a testing skewer comes out clean when inserted into the centre of the cake. Turn out immediately onto a wire rack and cool. Serve as is or with butter.
Makes a medium-sized cake.
