Method

 
Preheat the oven to 160 ºC (325 ºF). Beat the butter and castor sugar together until light and creamy. Add the oil and egg, beating well. Sift the cake flour, baking powder and salt together and add to the butter mixture. Mix well. Press the dough into a 23 cm springform tin. Prick the dough and chill for about 30 minutes. Beat the eggs, sugar and salt together until thick and creamy (the secret to the success of the cake is to beat the ingredients well. Add the lemon juice and rind, beating continuously. Add the cottage cheese, cream and cake flour and mix well. Turn the filling into the crust. Bake the cake for one hour. Turn off the oven, leaving the cake in the oven to cool and set. Carefully remove the cake from the tin and place on a cake platter. Makes a large cake.
