Basic baking mixture with cherries and almonds

    glacé cherries, halved

    almond flakes, lightly toasted

Prepare the basic baking mixture and turn into a greased 27 cm pie dish. Sprinkle with the glacé cherries and almond flakes, reserving a few for decoration, Bake for 30-40 minutes or until a testing skewer comes out clean when inserted into the centre of the tart. (Cover the tart with a sheet of aluminium foil if the crust turns too brown and the tart is not yet done.) Prick the tart gently with a testing skewer. Beat the butter and castor sugar together until creamy. Spread over the surface of the tart as soon as it comes out of the oven. Return to the oven for about 5 minutes to allow the butter and sugar to melt slightly. Decorate with the remaining glacé cherries and almond flakes. Serve with whipped cream if desired, or with thin cream if serving the tart as a dessert.
