Barley is über healthy, low GL, budget friendly, completely delicious, and an adorable addition to a picnic.

Ingredients (8)

1 cup pearl barley
1-2 wine — red or balsamic vinegar
1-2 tsp honey — runny
1 fresh dill — chopped
1 fresh mint — chopped
1 fresh basil — chopped
sea salt and freshly ground black pepper
feta cheese — optional

Method:

In a medium-sized pot of boiling water, cook the barley on the stovetop according to packet instructions.

Drain the barley and mix in the remaining ingredients, checking for seasoning and balance of flavours.

Spoon into small glass jars, or simple tupperwares, and refrigerate until you’re ready to hit the road for your epic picnic.
