Barley salad jars recipe

Ingredients

  • 1
    cup
    pearled barley
  • 1-2
    Tbs
    red wine or balsamic vinegar
  • 1
    Tbs
    olive oil
  • 1-2
    tsp
    runny honey
  • 1
    Tbs
    dill, chopped
  • 1
    Tbs
    mint, chopped
  • 1
    Tbs
    basil, chopped
  • Salt and freshly ground pepper to taste
  • feta cheese (optional)
 

Method

In a medium-sized pot of boiling water, cook the barley on the stovetop according to packet instructions.

Drain the barley and mix in the remaining ingredients, checking for seasoning and balance of flavours.

Spoon into small glass jars, or simple tupperwares, and refrigerate until you're ready to hit the road for your epic picnic.
