Bananas flamed in Van der Hum and rum

Ingredients (8)

30.00 ml butter — unsalted
60.00 ml brown sugar
5.00 ml cinnamon — ground
125.00 ml van der hum liqueur
60.00 ml rum — dark
4.00 bananas — halved lengthways
60.00 ml rum — dark
4.00 ice cream

Method:

Melt butter in a large frying pan and stir in sugar and cinnamon.
Cook for a minute or so over low heat, then pour in Van der Hum and rum and cook, swirling the pan, for 3 minutes until bubbling and thick.
Put bananas into pan and turn to coat with syrup.
Pour over remaining rum and immediately ignite. Continue shaking and swirling pan gently, until alcohol has burned off.
Place a scoop of ice cream on each plate, flank with banana halves and spoon over hot sauce. Serve immediately.
