Banana pecan squares

    butter or margarine, softened

    castor sugar

    egg, beaten
  • 5
    ml
    vanilla essence
  • 250
    ml
    mashed bananas
  • 375
    ml
    cake flour, sifted
  • 2
    ml
    bicarbonate of soda
  • 2
    ml
    salt
  • 50
    g
    pecan nuts, chopped
  • 16
    pecan halves
 

Method

 
1. Cream together butter and castor sugar until pale and fluffy. Beat in egg, vanilla essence and bananas. Sift together flour, bicarbonate of soda and salt; fold into creamed mixture. 2. Add the chopped nuts and mix well. Spread mixture into a greased 220 ml square pan, mark lightly into 16 squares; place pecan halves in centre of each square. 3. Bake at 180 ºC for 40 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven, leave to cool in a pan five minutes before turning out onto a wooden board. Cut into squares, leaving to cool on a wire cooling rack.
