Banana meat balls

    mince

    extra-large eggs, lightly whisked

    slices brown bread, soaked in 125 ml (0.5 c) water

  • freshly ground black pepper

    fresh mixed herbs, chopped
  • 4
    bananas, each cut into 4 pieces
  • 200
    ml
    dried breadcrumbs
  • CURRY SAUCE
  • 1
    onion, finely chopped
  • oil
  • 10
    ml
    mild curry powder
  • 250
    ml
    orange juice
  • 1
    rind of an orange
  • 10
    ml
    apricot jam
  • 15
    ml
    cornflour, blended with a little water to form a paste
  • salt and freshly ground black pepper

Preheat the oven to 180 ºC and spray a large baking sheet with non-stick spray. Lightly mix all ingredients except the bananas and breadcrumbs. Divide the mixture into 16 portions and shape a round ball around each piece of banana. Coat each meatball with breadcrumbs, arrange on the baking sheet and chill for 5-10 minutes so the mixture becomes firm. Bake for 20-25 minutes or until done and golden brown. Serve hot with a curry sauce and rice. Makes 16 meatballs. CURRY SAUCE Fry the onion in a little heated oil until tender. Add the curry powder and fry for another minute. Add the juice and rind, along with the cornflour paste and simmer until the sauce comes to the boil and thickens. Stir continuously. Season with salt and pepper. Serve with the banana meatballs.
