Ingredients (10)

625.00 ml flour — self-raising
65.00 ml drinking powder — malt-flavoured
65.00 ml brown sugar — soft
300.00 ml raisins
2.00 eggs — extra-large
65.00 ml oil
85.00 ml honey
125.00 ml milk
3.00 bananas — large, mashed
50.00 g bananas — dried, chopped

Method:

Preheat the oven to 190 ºC (375 ºF). Spray a 29 x 11 x 7 cm loaf tin with non-stick spray.
Combine the self-raising flour, malt-flavoured drinking powder and brown sugar. Add the raisins and mix.
Beat the eggs, oil, honey and milk together and add to the dry ingredients. Mix until just blended. Add the mashed banana and fold in. Turn into the prepared loaf tin and sprinkle with the dried banana.
Bake for 45 to 50 minutes or until done. The loaf is done when a testing skewer comes out clean. Cool slightly and turn out to cool completely. Slice and serve with butter.
Makes a medium-sized loaf.
