    butter

    white sugar

    bananas, mashed
  • 190
    ml
    milk
  • 2
    extra-large eggs
  • 500
    ml
    cake four
  • 3
    ml
    bicarbonate of soda
  • 3
    ml
    baking powder
  • 5
    ml
    vanilla essence
 

Method

 
Preheat the oven to 180 ºC and butter a 10 x 20 cm loaf tin or spray with non-stick spray. Cream the butter and sugar together until light and fluffy. Add the mashed banana and mix lightly. Heat the milk and eggs together, and sift the dry ingredients together. Add the egg mixture to the butter mixture, alternating with the dry ingredients. Mix well, add the vanilla essence and turn the batter into the prepared loaf tin. Bake for about 1 hour or until golden brown and a testing skewer comes out clean Makes 1 medium-sized banana loaf.
