Banana ice cream

    ml
    gelatine
  • 60
    ml
    water
  • 2
    big, ripe bananas, sliced
  • 250
    ml
    natural yoghurt
  • 65
    ml
    honey or maple syrup
  • 85
    ml
    castor sugar
  • 0.50
    lemon, the juice
  • 5
    ml
    vanilla essence
  • Maraschino cherries, to decorate
 

Method

 
Mix gelatine with cold water and place over boiling water until dissolved.
Mix together all the ingredients in a blender or use a hand-beater, mashing well.
Slowly add gelatine and mix through. Freeze in a large metallic bowl, stirring frequently, or mix in ice cream machine.
When ice cream is ready, place it in cocktail glasses and decorate with maraschino cherries and mint leaves.
If desired, pour sparkling wine over ice cream or serve with whipped cream.
