Banana ice cream

    ml
    sugar
  • 150
    ml
    water
  • 1
    egg
  • 2
    egg yolks
  • 2
    large bananas, mashed
  • 150
    ml
    thick cream
  • juice of half a lemon
  • 125
    g
    peanut brittle, chopped
 

Method

 
Slowly heat the sugar and water until the sugar has dissolved completely. Boil rapidly for 3-4 minutes until a thick syrup is formed. Remove from the heat. Whisk the egg and egg yolks until creamy and slowly add the syrup while beating continuously. Add the banana purée and mix well. Add the cream and lemon juice and pour into a dish. Freeze, stirring occasionally with a fork to break up the ice crystals. Freeze until hard. Serve with the peanut brittle. Serves 6.
