Banana gingerbread

    castor sugar

    soft brown sugar

    golden syrup
  • 4
    ripe bananas, mashed
  • 2
    eggs, beaten
  • 625

    self-raising flour

    baking soda
  • 5
    ml
    nutmeg
  • 10
    ml
    ground ginger
  • 5
    ml
    vanilla essence
  • 30
    ml
    milk
  • 125
    ml
    chopped walnuts
 

Method

Preheat the oven to 180 ºC (350 ºF). Spray a 20 x 12 x 7 cm bread tin with non-stick spray. Cream the butter, castor sugar, brown sugar and golden syrup until light and fluffy. Gradually add the banana and eggs and beat well. Sift the dry ingredients together. Mix the vanilla essence and milk. Fold the dry ingredients into the butter mixture, then the milk mixture, and lastly the nuts. Mix lightly, place into the prepared tin and bake for about 1 hour or until done. Let the gingerbread cool in the tin, then turn onto a wire rack to cool completely. Slice and serve with butter. Makes 1 large loaf.
