Banana fritters with delicate mint syrup

    dessicated coconut

    firm, ripe bananas, peeled and halved diagonally
  • MINT SYRUP
  • 125
    ml
    each sugar and water
  • 125
    ml
    chopped mint
 

Method

 
Mix flour, baking powder, coconut and sesame seeds in a large bowl. In another bowl, mix water, coconut milk, egg and palm sugar together to make coconut cream. Add to flour mixture, stirring until mixture is well combined. Heat oil in a frying pan. Dip bananas in batter and fry on both sides until golden brown and cooked through. Remove from pan, drain on kitchen paper and serve with coconut cream and mint syrup. MINT SYRUP: Place all the ingredients in a pan. Stir over low heat until sugar has melted, then bring to boil. Serves 4.
