Banana fritters with coconut syrup

    ripe bananas
  • 60
    ml
    white sugar
  • 100
    ml
    cake flour
  • 7
    ml
    baking powder
  • 80
    ml
    milk
  • 1
    ml
    grated nutmeg
  • oil for frying
  • SYRUP
  • 250
    ml
    white sugar
  • 250
    ml
    water
  • toasted coconut
 

Method

30 minutes
 
1. Mash bananas. Add sugar, flour and baking powder. Gradually stir in milk to form a smooth batter. 2. Drop spoonfuls into hot oil and deep fry until golden and crisp. Drain on paper towel. 3. SYRUP: Heat sugar and water together in a saucepan. Stir over gentle heat until sugar dissolves, then simmer without stirring until mixture forms a thin syrup. 4. Place fritters onto a serving plate and drizzle with syrup, then sprinkle with toasted coconut and serve.
