Banana dreams

Ingredients

  • 1
    quantity prepared Swiss or cooked meringue mixture (see recipe)
  • 2
    bananas
  • 20
    ml
    butter
  • 15
    ml
    oil
  • 2
    ml
    ground cinnamon
  • 10
    ml
    lemon juice
  • 250
    ml
    mascarpone cheese
  • 60
    ml
    honey
 

Method

1 hour + drying time
 
Preheat oven to 100 ºC. Draw 10 cm circles on baking paper. Grease and flour lightly. Pipe meringue mixture in continuous coils to fill up circle shapes and form baskets. Bake in the oven for 1 hour, then turn off the oven and allow to dry for 1-2 hours. Just before serving, slice bananas. Heat butter and oil and add cinnamon. Fry bananas over high heat until golden. Sprinkle with lemon juice. Divide mascarpone between meringue baskets. Top with bananas and drizzle with honey. Serve immediately. Serves 4-5.
